Keswick Creamery is located on our family’s dairy farm near Newburg, PA in the beautiful Cumberland Valley. We have milked registered Jersey cows since 1974.
Our cows are raised in a humane and healthy way. They are not confined to a barn. Instead, they graze freely on lush, green pastures. We do not use rBST or dock tails, which are common practices on large, commercial diaries. We have not used any chemical herbicides, pesticides or fertilizers on our farm for over twenty years. We use organic practices, but choose not to be certified since we purchase some feeds locally.
In February 2001, we started making raw milk, aged cheeses in our licensed on-farm cheese plant. Five years later, we added a pasteurizer to add whole milk yogurt and soft cheeses to our product list. In addition to being licensed by the Commonwealth of Pennsylvania to make raw milk cheese, we are also licensed to sell raw milk. In 2007, we started a raw milk CSA (available only in the state of Pennsylvania.)
All of our cheeses are hand-made using traditional methods. We use only fresh milk, live cultures and calf rennet. Since our cows are fed their natural diet of grass and hay, our cheese is a natural, creamy yellow color. As the seasons change, so does the intensity of the color of the cheese depending on how much fresh grass the cows are eating.
